    Many years ago a dear co-worker shared this recipe with me. Fairly quick to make with few ingredients.It has been a family favorite and my newly married daughter has requested it for her recipe box, too. It bakes into a really dense and hearty loaf rather than a cake. Depending on the juiciness of the apples, the baking time varies so be sure to test it with a toothpick to see if it is done. Otherwise, it will be a mass of "goo" in the center of the loaf! Hope you love it as much as we do!

    Ingredients:

    Directions:

      Beat egg and sugar.

      Add oil, baking soda, flour, and salt.

      Mix in apples.
    4. 4
      Batter will be VERY thick.(Apples make own liquid).

      Add chopped nuts and vanilla.

      Bake in greased and floured loaf pan at 350°F for approximately 40-45 minutes.

      I had a bushel of apples to use and ran across this recipe and it sounded like one we would love. I was right, we did love it and it was requested that I make it again soon by my DH, so we shall have it again!
