William Shatner's Cappuccino Muffins

"I love William Shatner and cappuccino; what could be better, hehe. These are on several sites, the goldmine again, where there are bunches of other celebrity recipes. I used instant coffee instead of espresso powder cause where I live that's all there is. It works fine."

  • Preheat oven to 400° and grease muffin tins or line with paper baking cups.
  • Sift all dry ingredients together into a bowl.
  • Make a well in the center of the mixture.
  • Beat the egg together with the milk and the melted butter. Add the vanilla.
  • Add to the dry ingredients along with the chocolate chips and mix until just moistened.
  • Spoon batter into prepared muffin cups, filling each 2/3 full.
  • Bake until just done, approximately 20 minutes.

  2. Loved them. I used regular instant coffee, but I would love to try them with the instant espresso powder next time if I can get it in my area.
     
  3. These were lovely and I really liked the espresso flavour. I increased the amount of coffee to 3 teaspoons but left the rest as it was. I also really liked the fact that you melt the butter for this recipe as it makes it much faster to make. A delicious coffee muffin.
     
  4. Bringing these to a brunch - stole one - deliciously great!!! Used about 3-4 teaspoons of instant coffee and added a little less chocolate chips... because I put a teaspoon of Nutella in the middle of the muffins... shhhh!! Thanks Dienia!
     
  5. Great muffins! I loved the coffee flavour (I do have and used instant espresso) with the chocolate chips. The touch of cinnamon was brilliant. A real plus for me for these muffins is that they're not too sweet. Great with our coffee.

  1. Has anyone use coconut milk? Results? Thank you for your help appreciate
     
  2. I used whole grains stevia blend, grated chocolate and 1 cup of strong coffee instead of the milk and espresso. Awesome and lower calories without loss of flavor. I also use my own homemade vodka vanilla. Yummy!
