Wild Rice Salad With Dried Cherries

Adapted from BC Low-Fat, Low-Cholesterol Cooking. A very different main dish salad. I liked it.

Directions

  1. Prepare rice mix by following the package directions; allow to cool.
  2. In a mixing bowl, combine the next 3 ingredients.
  3. In a smaller bowl, mix together the soy sauce, water, sugar, and vinegar; stir until the sugar dissolves.
  4. Add rice and soy sauce mixture to the apple mixture.
  5. Toss gently to coat.
  6. Add peanuts; toss gently.

I really likes the combination of cherries with wild rice. I would add 2 Cups diced chicken breast to turn this into a meal.
