This is one of the best recipes I have found and really full of flavor.

- 3 tablespoons olive oil
- 1 onion, diced
- 1⁄2 cup celery, diced
- 1⁄2 cup carrot, diced
- 1⁄2 cup pecans, chopped
- 1⁄2 cup wild rice
- 1⁄2 cup brown rice
- 1 cup mushroom, diced
- 3⁄4 cup beef broth
- 3⁄4 cup chicken broth
- Heat the oil in a large oven proof skillet. Add the onion, celery, and carrots. Cook until just soft.
- Add the mushrooms, pecans, and rice. Cook for 5 minutes, stirring frequently.
- Add the broth, stir well, cover and place in a 350 degree oven for 50-60 minutes or until rice is tender.
Wow, this is delicious. So many textures and flavors. Went great with a fish dish, and would be great with chicken or pork.
