Wild Rice and Pork Sausage Casserole

This isn't your ordinary casserole. Its easy and quick, but uses wild rice.

This was really good. The almonds gave it a good texure, and it had a very good flavor. It took a lot longer to prepare than I anticipated, because the wild rice took almost an hour to cook. If you have the wild rice on hand already, this would be a snap.

Directions

  1. Cook rice according to pkg. directions.
  2. Fry pork sausage, crumbled, drain off fat.
  3. Saute onions.
  4. Mix in flour and stir in cream, salt, thyme, oregano, margarine, slivered almonds and mushrooms.
  5. Mix in cooked rice and chicken broth.
  6. Bake at 350 for 40 to 45 minutes.
