Wild Mushroom Soup With Cognac

"This is another recipe prepared at one of my cooking classes. It is easy and dee-licious. You may also use assorted wild mushrooms rather than the white ones. Serve in teacups and use as an appetizer. Try it. You'll like it."

  • Combine the cepes and white wine in a saucepan and bring to a boil over medium high heat.
  • Reduce heat and simmer for 5 minutes. Remove from heat and let sit for 15 minutes.
  • Stain the liguid from the mushrooms through a fine mesh sieve and reserve. Coarsely chop the cepes and reserve.
  • Melt the butter in a soup pot over medium heat.
  • Add the white mushrooms and saute until they begin to exude their juices, about 5 minutes.
  • Add the cepes mushrooms, reserved white wine, milk and cream and bring to a boil, stirring occasionally.
  • Lower the heat and simmer the soup uncovered, stirring every now and then, for about 45 minutes.
  • With a slotted spoon remove about 1-1/2.
  • cups of the mushrooms from the soup and reserve.
  • Puree the soup in a blender until very smooth and return the soup to pot.
  • Add the reserved mushrooms.
  • Add chicken broth and season with salt and pepper. Stir in cognac.
  • Warm the soup until heated through. Do not boil.
  • Garnish with sliced mushrooms or parsley.
  • Preparation time is also cooking time.
  • Makes 8 servings.

My name is Joanne and I have been married for 49 years to my high school sweetheart, Roman. We live in Louisville, Oh just east of Canton which is home of the Pro Football Hall of Fame. We have two grown sons, one recently divorced and the younger son is getting married for the first time in Sept. 07. We have no granchildren which is very disappointing but there is still hope. I found this site in Dec. O5 and I am addicted. I recently took part in the cookbook swap which was fun and now am signed up for Pick A Chef. I love to cook and enjoy serving as hospitality chairman at our church. I plan and prepare all luncheons, banquets, wedding receptions, etc. Many women and men assist me with these affairs. I also love traveling, gardening and visiting the elderly. I enjoy browsing through my collection of Jr. League cookbooks and watching the Food network. Before Christmas each year I bake about 25 varieties of cookies and deliver them to the elderly. A most rewarding experience.
