This is a nice flavourful granola that pairs well with yogurt. It is crunchy and makes large cluster, which I love.
The taste is cinnamony and wintery, makes me think of Christmas with the ginger added in. Definitely not your usual granola, but a nice change of pace.
I scaled the recipe down quite a bit as its only my sis and me (to 5 servings) and it still made a big box full.
I made some changes due to what I had on hand: I left out the syrup using only honey (only the amount mentioned for it, not the syrup amount as well) and instead of pecans I used almonds. Also I didnt have the time to dry it at the low temp, so I baked it at 350°C for about 30 minutes, which worked out nicely.

Nice granola. I cut the ingredients in half and then in half again (1/4 perhaps LOL) which resulted in roughly 20 oz of granola. I left out the cherries, but added dried blueberries and golden raisins. I cooked mine in the crockpot (on low with the lid cracked a bit for 3 hours) which was easy and didn't heat up the house. We do prefer our granola a bit sweeter, but definitely a nice granola! Made for AUS/NZ Recipe Swap. THANKS!

Followed your recipe right on down (although I did use 2 very rounded cups of dried cherries!) & you've definitely got A WINNER OF A RECIPE! Great for munching, but also very nice as a topping on puddings, ice cream & hot oatmeal (Am sure I'll find other things, as well!)! Absolutely keeping this recipe around!
