You can make these in just a few minutes.
- 12 triscuit style rye crackers
- 6 thin slices deli corned beef
- 3 slices deli sliced aged swiss cheese
- 1⁄4 cup sauerkraut, drained
- 1 -2 tablespoon thousand island dressing
- Dot crackers with a little bit of dressing, then top with corned beef, then sauerkraut, then cheese. Make sure the kraut is dry.
- Microwave just until cheese melts, or heat in a toaster oven or warm oven for a few minutes and serve hot.
