modified from 100 days of whole food recipe. I added more cinnamon and applesauce for more flavor and to make it moist. ( The original came out too dry for our liking). Just adding this here for safe keeping

  1. preheat oven to 325.
  2. blend all dry ingredients.
  3. make a well in the middle and add in eggs,oil,applesauce,honey and vanilla. Stir until just mixed.
  4. fold in grated zucchini and chopped nuts.
  5. Pour batter into greased loaf pans and bake about 50 minutes, until toothpick comes out clean in center. If making muffins, bake about 15-20 minutes.
