This recipe is a slight makeover from a recipe in 21-day Weight Loss Kickstart, by Neal D. Barnard, MD. My family loves these. You don't miss the egg at all. Very fluffly pancake, especially for one made completely of whole wheat flour.
- 2⁄3 cup whole wheat pastry flour
- 1⁄4 teaspoon salt
- 2 teaspoons baking powder
- 2⁄3 cup plain soymilk
- 1⁄8 teaspoon cinnamon
- nonstick cooking spray (optional)
- Mix the flour, salt, and baking powder together in a metal bowl. Add the almond or soy milk to the dry ingredients and mix them until they are well combined.
