  • Combine flour, baking powder, and salt.
  • Add olive oil and stir until well combined.
  • Add in warm water a few tablespoons at a time and until the dough can be gathered into a ball.
  • On a floured surface, knead dough by hand for about 10-15 minutes Cover and let rest for 15 minutes.
  • Divide dough into 10 balls.
  • Roll each ball to form a circle. (Make sure surface is floured or else dough will stick).
  • Cook each tortilla on a ungreased skillet over medium-high heat for about 1 minute (30 seconds on each side) until puffy.
  • Freeze or eat right away!

Questions & Replies

  1. I've been using King Arthur's recipe to make white flour tortillas, and it calls for 2.5 cups of white flour, 0.25 cup fat, and 1 cup water. Usually, whole wheat flour requires a little more water to hydrate, so I'm surprised that these call for much less water. Do you usually end up adding a fair amount more than that?

  1. Tortillas were a hit. I used a corn tortilla press to flatten the balls into rounds. Made rolling them easier and more round. Got eight 10- to 12-inch tortillas. Was cautious at first rolling them out, but was able to get them nice and thin. Instead of kneading for 10-15 minutes (out of sourdough experience having broken the glutens with hard bran) I mixed in the liquid kneading only until combined, let it sit for 15 minutes to soften the bran and then kneaded more thoroughly. No idea if it makes a difference, but thought I'd share the changed step.
     
  2. These do NOT need to be kneaded. That makes them too tough. Also, this dough is too hard. It needs to be more elastic to make more palatable tortillas. Look elsewhere for a better recipe. We tried the recipe and the family of four who eats lots of wheat didn't like these.
