Here's a healthy and delicious cookie recipe for those trying to eat more whole grains.

  1. In a mixing bowl, cream the butter, peanut butter and honey.
  2. Beat in egg and vanilla.
  3. In another bowl, combine the remaining ingredients; add to the creamed mixture.
  4. Cover and refrigerate for 30 minutes.
  5. Drop by teaspoonfuls 2 inches apart onto ungreased baking sheets.
  6. Flatten with a fork dipped in sugar.
  7. Bake at 350° for 8-10 minutes or until golden brown.
  8. Let cool on pans for 1 minute before removing to wire racks to cool completely.

These cookies were okay, they just didn't have enough peanut butter flavor and just seemed pretty light. I love that they are so healthy. We will probably make them again, but not for awhile. They seemed to get better as the week went on.

Wonderful recipe! So healthy & delicious! I used red fat peanut butter & rolled the cookies in Splenda. I'm transitioning to whole wheat in my house & this fits the bill. thank you so much for enabling me to keep enjoying my favorite kinds of cookies!

A healthy cookie that tastes great! Very tender, not the hockey pucks I've come to expect with whole grains. Made with ingredients I'm happy to feed the kids. They loved the cookies with a cold glass of milk. We'll make these often! Thanks, Chris, for a great recipe!
