While the guests were pigging out on the "Brekkie Buffie" I made these for myself this morning. Fending off the vultures with words like "Diabetic", "For My Blood sugar", and the ever unpopular "Health Food" I managed to keep them for myself. YAY!!!. These are really great, moist and light. I used a no sugar added syrup and had a delightful breakfast while trying not to smile. Thank you for a most enjoyable recipe, it's a keeper!

Ingredients Nutrition


  1. Blend/mix all ingredients together.
  2. Heat pan till drop of water "dances" in pan.
  3. Pour batter into pan to desired size.
  4. When bubbles appear on surface and begin to "sink," flip and cook on other side until brown.
  5. Repeat with remaining batter.
  6. Serve with maple syrup!
