  • Blend all dry ingredients together in a bowl.
  • In a seperate bowl; combine egg, oil, and milk; add dry ingredients to egg mixture and stir until JUST blended.
  • Fold in apples and nuts; batter will be thick.
  • Fill well greased muffin cups 2/3 full; bake at 400 degrees for 18 to 20 minutes, or until tops spring back when touched.

  1. I love this recipe! With fall coming soon, I thought this would be a great recipe to get me in the mood for baking. Great way to incorporate some flax seed into your diet and these muffins are hearty and delicious. I added just a touch more milk because I like my muffins on the more moist side, but other than that I followed the recipe exactly and they turned out great.
     
  2. A good healthy muffin and by substituting buttermilk for sweet milk you will have a moister product. Also could try yoghurt but add a couple more tablespoons.
     
  3. These are wonderful. I made them exactly like the recipe. I didn't not find them dry at all, as a few did. I would like to point out a few things about flax seed. Our bodies can not get nutrients from whole flax seeds (google it!). I use a small coffee grinder to grind the flax seed. Also, flax seed DOES have wonderful Omega 3's--which can easily go rancid. Store flax seed in the freezer, and only grind what you need. Or store your already ground flax seed in the fridge or freezer--it will help to keep it fresh and tasty. I also keep my nuts in the freezer for the same reason. I will try these next time with the applesauce instead of oil--I didn't have any on hand today.
     
  4. Simple to make and very tasty!! I love this muffin. It's moistened, and soft and fluffy! I didn't have any ground flax seeds and nuts, I omitted them. I made a recipe double quantity and used square pan. so glad i found this. Thanks for posting. I will definitely be making them again.
     
  5. My husband really liked these. He isn't too big on whole wheat....but liked these....and they have no cinnamon which is why I chose this recipe (he can't eat it). The only thing I changed was leaving out the flax seeds--didn't have any. I got 17 muffins from the recipe and I filled the cups almost full. Thanks for the recipe. Will be making them again.

  3. I've tried a lot of muffin recipes but this one tops them all! I used both flax seed and wheat germ, replaced the graham flour with whole wheat and used berries in place of the apples. They had just the right amount of sweetness and were light and chewy - not heavy like healthy muffins tend to be. My 2yr old and husband eat at least 2 a day. I like to put them in freezer and pop them in the microwave to heat up. Thanks for this recipe!
     
  4. I was looking for a healthy apple muffin recipe and this one was perfect. It mixed up pretty quick, and I added a little bit of streusel topping because I was really craving that. I used applesauce in place of the oil and was really happy with the taste and texture of these muffins. My husband even said they were good, and I don't think he would have even tried them if he would have seen the ingredients! I used about 1 1/2 small apples to get 1 1/2 cups. I thought I would prefer a recipe with grated apples, but the small chunks of apple give it really good flavor. I will definitely be making these again.
     
  5. These muffins were pretty good! I did make several small changes, however. I used applesauce instead of the oil, and i didn't want the white flour, so i just substituted more flax and whole wheat flour. also, i used brown sugar instead...just a personal preference. my muffins turned out very moist and delicious...i think i'm going to make more today.
