Whole Wheat Blueberry Muffins

"These are delicious blueberry cupcakes using whole wheat flour. Please note that the blueberries are added the last. You can also use raspberries or cherries or other fruits you like. Note: Use honey or golden syrup if you can not find agave syrup which can be found in health stores here but is quite expensive."

directions

  • Heat oven to 350°F.
  • Blend dry ingredients together in one bowl.
  • Whisk liquids together in another, then add carefully into the first bowl with the dry ingredients.
  • Blend all together well.
  • Put the blueberries into the batter, pour into muffin cups and bake for 20 - 25 minutes.

  1. I love this recipe. My husband and I are on the Perfect 10 diet. I modified the recipe by using unsalted butter in exchange for the oil. The recipe seemd too wet with a whole cup of agave, so I decreased that by about 1/4 cup. I make a batch and freeze muffins individually for a quick, healthy on teh go breakfast. I also make these with a combo of blueberries and raspberries. Delicious!!!!!!
     
  2. This whole recipe was off - it made 30 muffins (not 12) and the batter was so wet and gooey that it took over 45 minutes to cook (I followed the recipe exactly). Even after 45 minutes the centers were still not done. The measurements must be off by a lot. I am so disappointed I just wasted all of those ingredients, especially those yummy blueberries!!

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used. I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
