ingredients
- 1 cup whole wheat flour
- 1 tablespoon brown sugar
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1 cup skim milk
- 1 egg
- 2 tablespoons applesauce
- 2 bananas, preferably overripe and mashed
- nuts (optional) or raisins (optional)
directions
- Mix dry ingredients in a bowl.
- Combine wet ingredients.
- Whisk in dry ingredients.
- Using a 1/4 cup measure drop batter onto a hot frying pan.
- When pancakes begin to bubble flip them.
- Finished when golden on both sides.

I used this as my basic recipe for measurements. I used 3/4 c whole wheat spelt flour w/1/4 cup buchkwheat flour. No sugar and replace skim milk w/3/4c almond milk.These where great your recipe was all I needed to make the dietary changes to meet the diet of family.They were mois,t fluffed up nicely and made many small pancakes.

I LOVE this recipe! Since I found it about a month ago, I have made it 3 or 4 times, and I purposely buy extra bananas so I will have some very ripe ones left over. I did add cinnamon to the recipe. I didn't add walnuts to the recipe since I have a baby who can't eat nuts, but I do sprinkle walnuts on top and cover with syrup. Left overs freeze well for the rushed mornings. GREAT and healthy recipe!
