ingredients
- cooking spray
- 473.18 ml whole wheat flour
- 4.92 ml baking soda
- 2.46 ml salt
- 2.46 ml nutmeg
- 4.92 ml cinnamon
- 29.58 ml olive oil
- 59.16 ml unsweetened applesauce
- 118.29 ml honey
- 2 large bananas, mashed
- 2 eggs
- 59.14 ml warm water
directions
- Preheat 325. Use cooking spray to lightly grease your muffin pan.
- Mix dry ingredients.
- Mix oil, applesauce, honey, eggs, then, bananas.
- Add liquid ingredients to the dry ingredients gradually while adding warm water occasionally to help moisten the mixture.
- Bake for about 13 minutes.

These taste really great for being so healthy. I have to go with four stars, though, because of the sponginess and the fact that I had a hard time telling if they were done. These muffins are so dense I think they looked/felt done before they really were. (I probably baked them for about 17 min.) Thanks for the recipe, though! I'll definitely be making them again. :) UPDATE: The muffins seemed to get less spongey once I let them sit overnight. (Does that make any sense?) Anyway, I'm upping my four-star review to a five. The muffins are now moist and soft, and I love them.
