An easy low fat muffin recipe.
- 1 1⁄2 cups unprocessed oat bran
- 1⁄2 cup firmly packed brown sugar
- 1⁄2 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1 cup diced apple
- 1⁄2 cup almond milk
- 2 egg whites
- 2 tablespoons applesauce
- Mix dry ingredients together.
- Add wet and mix just until blended
- Pour into a 12 muffin pan.
- Bake for 19 minutes at 425 degrees
- Let sit in the oven for 2 minutes before removing.
