I got this recipe from a Martha Stewart magazine. It is so delicious, great for sandwiches and toast. I have even made whole grain french toast with this and it's awesome.
In a bowl stir the Whole wheat flour, bran, and 1 1/4 cups of water. Let it sit for 30 minute.
2
In a bowl or glass measure, stir the warm milk and 1 TBSP white sugar until sugar dissolves, add yeast and stir, let stand until foamy (5 min).
3
In mixer bowl, mix together the whole wheat mixture, milk mixture, brown sugar , cornmeal, oats, flaxseed, and salt.
4
Add 2 1/2 cups bread flour, and mix in the mixer with dough hook attatchment 5-7 minute Add a little more flour as needed if the dough is sticky.
5
Form into a ball by folding sides underneath. Place in a greased bowl, cover and let rise until doubled in size.
6
Punch down dough and dump out onto a lightly floured surface. Fold top edge up and into the center of the dough. Continue with the other three sides until you have formed a rectangle.
7
Then begin to roll into a log pinching into itself as you go. Pinch the seam, and fold the ends undereath, and place into a greased loaf pan. Brush the top with water and sprinkle with oats and bran. Cover lightly with plastic wrap and let rise until doubled in size.
