Gooey, cookie bar with a sweet and salty flavor.
- 2 cups whole oats
- 1 3⁄4 cups whole wheat flour or 1 3⁄4 cups pastry flour
- 1 cup butter
- 1 cup firmly packed brown sugar
- 1 teaspoon cinnamon
- 1⁄2 teaspoon baking soda
- 1 cup strawberry jam
- Combine all ingredients except jam in a bowl. Beat ingredients at low speed until crumbly. Reserve 2 cups of this mixture. Press mixture firmly into bottom of greased 13x9 pan. Spread jam in a thin layer across pressed mixture. Now evenly sprinkle the reserved 2 cups across the top of jam. Bake 20-30 minutes or until golden brown. Let sit in pan or glass dish to cool for about 15 minutes and than cut into squares before cookie bar is completely cooled.
Very yummy! We will make these again.
I'm adding more whole grains to my diet, but still watching what I eat. This is almost guilt free eating. Since I've cut back so far on sugar, it was a little sweet. I'll cut back on the brown sugar and try it again. My family thanks you for this recipe, because I've all but quit making sweets.
