I have made this recipe my personal project...I am on a "clean eating" diet and these muffins have really helped me out. They were great as is, but I have tried to add to them by adding 1/4 cup flax seed ground in coffee grinder, 1/2 cup of unsweetened applesauce to keep them moist, 30 drops of Stevia natural sweetner, and nuts of your choice. They are a very healthy alternative to normal breads. Highly recommended!
These were quite tasty, although I think they need a bit more spice in them. I added 1/2 teaspoon salt (I never bake without salt) and 1 teaspoon almond extract. And I left the oats whole, becuase I like what oats do to the texture of breads. I will definitely make these again.
I enjoyed the muffins, but my family thought they were a little blan. I used honey instead of molasses. If I make then again I will try using the Baking Spice Blend Mix that was suggested as an alternative to the cinnamon. Thanks for sharing.
Very good muffins. I used whole grain graham flour instead. They were actually done in 20 minutes instead of 25. I will make these again.
Delicious and healthy and a great way to use blueberries along with a great way to use up the last of the buttermilk. I made a few minor changes to the recipe by not using oat bran (couldn't find it) and using oat flour in its place. I also skipped the cinnamon (out of) and instead of the molasses (out of) used honey in its place. I sprinkled nutmeg and sugar over the tops of the muffins -- and got 15 muffins out of the recipe--the three of us ate every one! A great breakfast for Father's Day or any summer Sunday!
