Found this recipe in a book I was reading and it sounds interesting; don't remember the book. Have not made it yet, but will soon and wanted to make sure I have the recipe saved. Maybe someone else will give it a try also

  1. In saucepan over medium heat bring water, oil and coconut milk to a boil.
  2. Add salt and rice, reduce heat to low and cook covered until water absorbed, about 25 minutes.

Made for 2008 All New Zaar Cookbooks Tag. This really wasn't much different than regular rice and you couldn't really taste the coconut milk. I served it with Plum Chicken With Snow Peas.
