- 4 ears white baby corn, cut off the cob
- 1 small red onion, diced
- 1 firm avocado, diced
- 1 lime, juice of
- Toss corn, onion, and avocado in lime juice.
- Season with salt.
- Serve with white corn tortilla chips.
