This was very good and don't know if I should rate it because I cooked it in the crockpot. It had great flavor and DH loved it. Thank you!
I just fed this to 9 people and every one LOVED it! The only modifications I made was adding an un-drained can of diced stewed tomato's, and I chopped up some cilantro for a topping option when serving. I will probably try Rotel instead of the stewed tomato's next time. This is a keeper!
We family loved this recipe! It was easy to make and delicious. I made a stock (Rescued Turkey Stock #24576) and prepared everything pretty much as listed on this recipe. I couldn't find Great Northern beans so used a mixture of white (Navy) beans and white kidney beans. Also, I used a Mexican cheese mix instead of the Monterey Jack.
10/7/12 update: I have been working on this and now make a few changes; I do not add the oregano because it seems to just float to the top and looks unappelaing. I take about 3/4 cup of the chicken broth and dissolve about 2 tablespoons of cornstarch to make this more like chili. After these changes this is now one of our favorite meals.
Great soup - DD thought it was a little too spicy and said to reduce the green chilis to one can but I thought it was great. I did add about one extra cup of cheese. I thought this would be thicker than it was but that's okay - it is delicious!
This recipe rocks! I use less onions and guess at the chicken and cheese. I have frozen this soup before and it tastes just as great months later. Excellent soup!
My boys loved this. It was a great hearty meal with a ceasar salad around the fire pit this cool October evening, post football. I used only 2 cups of cheese and think it would have been excellent without. I used more cumin than called for. I forgot to buy the chilis, so used a 1/2 jar of salsa verde. We will have this on rotation for the remainder of football season.
Thank you a million times for posting this recipe! I make soup every week and I am always trying new recipes. After our first bite this soup immediately moved to our #1 soup recipe. I used 4 cups of broth and 2 cups of cheese.
Very good! Not as spicy than others I've tried (which is good for me because I'm prone to heartburn).
My fiance loved it! It will be a permanent dish in our house. I added twice as much red pepper and I seasoned the chicken with salt/pepper/chili powder/oregano & boiled in chicken broth (low sodium/no fat). All I need now is a bigger pot. Thanks for making me look like a great cook ;)
