  1. In a large pan, saute onion and garlic in oil til transparent.
  2. Add poultry, seasonings (except for parsley) and saute a few more minutes.
  3. Add broth and drained hominy and beans.
  4. Stir.
  5. Simmer for 1 hour, stirring occasionally.
  6. Add parsley and simmer 5 minutes.
  7. Serve garnished with grated cheese.
