My boyfriend loved this. I thought it was ok but not spicy enough. I used leftover grilled chicken and leftover corn on the cob that I cut off the cob instead of a can of corn. I also used fresh tomatillos from the garden instead of canned tomatoes. Next time I'll probably add some chopped garlic and jalapenos to spice it up more.

Delicious! I put in chili powder instead of cumin. It's a great quick and easy meal.

Very tasty! I decided to make this right before dinner with leftover roast chicken. I did not have the beans in the house, but it was still delicious. I used frozen corn, and only 1 tsp. of cumin since I left the beans out. We served it with grated cheese on top and corn muffins. Very well received by my husband and teenage son.
