  1. Saute onion in butter until soft and tender.
  2. Transfer mixture to a large soup pot; blend in broth, bouillon, potatoes, carrots, cauliflower, broccoli, and rice.
  3. Simmer about 15-20 minutes or until rice is tender.
  4. Add in asparagus and spinach; return to a simmer.
  5. Blend in milk; continue to simmer over low heat until vegetables are crisp-tender.
  6. Adjust seasoning to taste with salt/pepper.
  7. Garnish with cheese.
