Soup
- 354.88 ml dried white kidney beans or 354.88 ml navy beans
- 9.85 ml olive oil
- 3 clove garlic, finely chopped
- 1 onion, finely chopped
- 1.23 ml hot red pepper flakes
- 1892.72 ml vegetable stock (or chicken stock)
- 1 large potato, peeled and diced
- 118.29 118.29 ml rice or 118.29 ml couscous
- 2.46 ml pepper

Salad Salsa
- 2 large tomatoes, chopped and drained
- 118.29 ml chopped fresh arugula or 118.29 ml watercress
- 29.58 ml chopped fresh chives or 29.58 ml green onions
- 29.58 ml chopped fresh basil
- 29.58 ml chopped fresh parsley
- 1 clove garlic, minced
- 2.46 ml pepper

directions
- Cover beans with water and soak for 3 hours or overnight in fridge.
- Rinse and drain well.
- Heat oil in large pot.
- Add garlic, onions and hot pepper flakes and cook for a few minutes without browning.
- Add beans and stock.
- Bring to boil.
- Lower heat and simmer gently, covered for 1 hour or until beans are tender.
- Add potato and cook for 10 minutes or until tender.
- Puree soup in blender or food processor in small batches.
- Return to saucepan and thin with additional stock or water until soup reaches desired consistency.
- Add pasta or rice and cook for 10 min.
- Add salt& pepper.
- Pasta or rice with thicken soup slightly, so thin soup again if you wish.
- Taste and adjust seasonings if necessary.
- Combine all salsa ingredients.
- Serve soup in flat bowls with large spoonful of salsa in centre.

This is so easy to make. I took a few liberties with this recipe, but nothing major. I used canned beans instead of dried -- 2 cans for a 1/2 recipe. I also had to improvise with the salsa because I couldn't get any basil this time of year. Instead, I used a basil-flavoured olive oil to make a type of pesto, mixing it with the other ingredients for just a couple seconds in the food processor. Thanks for a quick recipe that warmed us up on a chilly winter day. If you don't like spicy things, this recipe has lots of flavour so I'm sure you could leave the chilli flakes out.
