This is a very tasty soup that my DH and I enjoyed today for lunch. I made it last night and warmed it up this afternoon. I think the flavor is wonderful. I haven't made many bean soups before, but I will now! Thanks for sharing.
I used cannellini beans only because I didnt have any variety of white bean and the green chili adds a little heat - I added more jalapeno's since we like it hot - was a nice combination - thanks!!!!
It was just ok for me. I didn't feel there was a ton of flavor for some reason. I added everything it stated, the only change I made was made it with Pinto beans, because I didn't have any white beans on hand. My DH liked it, and thought the spicyness was great.
This was really yummy! I used about twice as much chicken since I had it (and it didn't overpower the other flavors). I also decreased the spice a bit for this crowd, but it still had a nice kick to it. Had to sub lemon for lime since I was out, and used the whole lemon. Also added 2 large potatoes, they married very well with it. Thanks for a delicious soup idea!
What kind of person makes this for a present to herself? I do! I just *love* hot foods, hot soups, hot peppers, you name it, and I love it. This is a enormous mix of all the tastes and aromas that have such a wonderful kick as well as healthy alternative to the after *Holiday* blues. I followed this exactly, except I added some XX-HOT dose of hot sauce to the top prior to devouring it. This is so easy to put together, had everything right in the cupboard. One difference I did make, although there is not a difference at all for me, is the use of fat/free soy milk (plain) rather then regular fat/free milk. The lime just gave such a nice soft taste, and the Parmesan cheese was a welcomed addition as well. Just loved this ~Nimz~ can't say enough about it. You can bet this will be a regular at my table.
