White Bean Salad is easy enough to make during the week and pretty enough for a dinner party. The combination of colors are simply beautiful in a glass or crystal bowl.

  1. In a small saucepan, heat olive oil and cook the garlic for 1-2 minutes. In a salad bowl, combine beans, tomato, salt, black pepper and basil leaves. Pour warm garlic oil over the salad and combine. Chill for at least 30 minutes.

Made this pretty much as given, although I did use just 1/2 teaspoon of salt & then 1 teaspoon of lemon pepper rather than the full measure of salt & pepper as listed!
