White bean salad I serve at a barbecue. Easy prep and can be made ahead.
- 2 (15 ounce) cans white beans, drained
- 1⁄4 cup lemon juice
- 3 tablespoons olive oil
- 1 garlic clove, minced
- 1⁄2 red onion, chopped
- 1⁄4 cup chopped parsley
- Mix all the vegetables together.
- Whisk oil and lemon juice together and season with salt & pepper to taste.
- Stir into vegetables and refrigerate.
