The onions, carrots, garlic, etc. were lightly softened in olive oil then transferred to a crock pot along with the other ingredients and cooked on LOW for about 4 hours. The soup was very soupy even with adding an extra can of beans and pureeing most of the mixture. I think I would decrease the stock down to 4-5 cups. Loved the taste especially with the use of fresh rosemary from our herb garden. Reviewed for Best of 2011.
Delicious, healthy soup! I loved the flavor combinations. The rosemary and parmesan really helped to enhance the flavors. I blended it for a smooth soup. Next time I will leave it chunky. I especially love the directions for making it a thicker chili. I'm excited to try that! Thanks for a healthy soup recipe!

Made according to recipe, with lots of garden rosemary -- and used my stick blender rather than food processor. Lovely, creamy. tasty soup ! Thanks for posting !
This is a delicious and oh so easy soup. I really enjoyed the flavors of the rosemary mingled with the parmesan cheese. My immersion blender was used to break up the beans. The soup was not smooth but had a nice texture. This was served with blue corn muffins for a very satisfying meal. Made for Aussie Swap.
I used vegetable broth instead of chicken stock, thus making this a healthy recipe.
Absolutely delicious! Loved the delicate rosemary flavor. I followed the recipe, sticking with the 7 cups of broth. I added 1 extra can of beans, just because I love 'beany' soups. The parmesan and chopped parsley garnish are like the icing on the cake. Thanx for posting!
Awesome soup!!!! I made some for my work lunches and my hubby scarfed it down! Oh well. Next time I'll double it!!
This is very good. I did add spinch and a splash of lemon juice. Even my picky child liked it.
