White Bean and Potato Stew

Hearty stew for a cold day. DH loves the comforting taste. I usually serve with bread. It's pretty healthy besides the sausage.
Directions:
1
chop sausage into small pieces. I usually slice them then cut into quarters.

heat oil on medium heat in large pot.

add sausage and cook until brown, about 5 minutes.

add onion, cook another 5 minutes.

add cumin and coriander, make sure to stir well.
6
meanwhile drain liquid from bean.
7
add stock or broth to pot, let come to a boil.
8
add beans and turn down to a simmer.
9
peel potato and cut into small cubes.
10
add potato to pot and let simmer for 30 minutes.
11
add salt and pepper to taste.

enjoy!
