You can add a little liquid smoke just before serving to add a nice smokey flavor to this hearty vegan stew.

  1. Heat the oil in a large pot and then sauté the onions and celery for 3 or 4 minutes. Add the garlic and sauté an additional minute.
  2. Put all the remaining ingredients EXCEPT the beans and parsley into the pot and bring to a boil. Cover and lower to a simmer and cook for 45 minutes.
  3. Add the beans and parsley and cook through for about 15 minutes.
