Yummy on pancakes or served with a fruit pudding for Christmas.
- 60 g unsalted butter, softened
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 2 tablespoons apricot jam
- 1 tablespoon caster sugar
- Beat all ingredients together until light & fluffy.
This butter is sooooooooo good. I love the spices and the apricot jam flavor. I used the butter on buckwheat pancakes, but I can't wait to try it on other things. I will be keeping this on hand often. Thanks for another great recipe, Mandy. Made for March 2012 Aus/NZ Swap.
