Whipped Skim Milk (W/Vanilla and Cinnamon)

"This is a frothy wonderful treat to have in the evening when you don't want to go to bed with anything heavy in your stomach. I always feel so decadent drinking it and have to remind myself that it is actually healthy and has no fat or added sugar in it!"

  1. I don't know if there's a vortex at my house or what but when I tried the recipe in my brand new vitamix blender, it was a disaster. I'm not sure what the ice cubes are for but they seemed to just water everything down and wouldn't allow it to foam. After just 3 minutes, the blades started to heat the milk and after 4 minutes it was already warm to the touch. I will play around with it a bit next time. Kill

  2. Light and frothy, a good drink but not very sweet. I added 1/3 cup of sugar and that made it a lot better. The next time I make this I might take out the cinommon, I also froze it to make more of an ice cream, worked nicely. Definitely recommend

  3. Great diet treat! I added Splenda as well! Great sub for ice cream. Does not come close to that high fat and sugar treat but a good way to get a cold treat without ruining your diet!

  4. This was very nice on a hot summer night. I added a half tsp of Splenda, which made it a little sweet, but followed the recipe otherwise. I only blended for 4 min, I used my Magic Bullet and had to stop when the volume of the milk had increased so much it wouldn't fit anymore! Will make again with a bigger blender, never knew you could eat skim milk with a spoon! Trying with cocoa next!

  5. My Oster blender struggled with this, Maybe in a Vita-mix you would get complete foam? Liked it with pumpkin pie spice and stevia.

Growing up, my mom didn't keep any junk food in the house so if I wanted something sweet I had to find a way to make it (or go to a friend's house)! I loved looking through my mom's recipe books and trying to find recipes that I could make. I baked a lot of home made bread from Betty Crocker's Big Red Book, and every holiday, my mom and I would make pies together from scratch. I didn't actually get interested in cooking main courses until I got married and realized that I had to actually put dinner on the table every night. Just as I was starting to get the hang of it, I was diagnosed with Celiac Disease in May of 2007. This meant that I had to learn a whole new way of cooking - gluten free. I have accepted this as a new challenge and have fallen even more in love with cooking and baking. There is nothing like the feeling I get when I have success with creating a new recipe! My inspiration usually comes from a craving for something that I can't have because it is not gluten free. I immediately go back to my kitchen and learn how to make it myself! I also focus on creating recipes with all natural ingredients and avoiding artificial or added sugars.
