So simple! I'm eating cottage cheese as a sub for regular cheese. This recipe makes it taste like low fat cream cheese but being cottage cheese is lower in fat.
- Place the cheese in a food processor or blender, I use a magic bullet blender for this.
- Blitz until all the curds are broken up and the mixture appears smooth.
- Place in a bowl and garnish with black pepper.
- Note once made you can add any flavourings you want spices, vegetables prawns etc.
My yogurt went wrong so I ended up with rather rubbery ricotta/curds - Googled for ideas of how to make it tasty and hit this! Used a stick blender and added a few drops of distilled vinegar to give it a slight tang, incredibly easy and really delicious. Thanks for posting!
