  • Preheat oven to 425 degrees.
  • In large bowl, beat together the egg, sugar, milk and butter.
  • Mix into the milk mixture the flour, salt and baking powder.
  • Batter may be lumpy.
  • Fold in one cup wheat germ.
  • Spoon mixture into greased muffin tins.
  • Bake for 20 minutes.

  1. They were okay, but nothing I'd make again. After reading all reviews I tried adding: 1/2 t. vanilla, 1/2 t. cinnamon, walnuts and raisins. Also, I cut the baking powder back to 3 t., but could still taste it. They were not dense nor overly sweet [a good thing]. There are so many flavorful healthy recipes out there that I'd rather make again.
     
  2. These were okay. I agree with other reviews: mild taste, cut back on the butter, had a slightly corn bread flavor from the wheat germ. I will make these again using suggestions already posted; nuts, berries, something. Not a bad muffin, nothing terribly amazing either.
     
  3. Wow! These were pretty darn good. I was a little skeptical about it because although I love wheat germ for its health benefits, I don't care all that much for the taste. BUT it's a very mild flavor and it's moist and great for spreads/jams. These would be great with any additions too. I added coconut flakes on the tops and maybe next time I'll throw in some spices ;-) Thanks for a fab recipe MJ! Update: Baked this in an 8x8, halved the recipe and it came out wonderful.
     
  4. These are good but very heavy muffins. I wasn't expecting them to be so dense... two is plenty to feel full at breakfast time. When I make these again (because I will!), I will cut down the amount of butter as I thought it was a bit much. I love the amount of wheat germ in these, but I will also add some raisins or other dried fruits as they are a bit plain. Great recipe! Thanks!
     
  5. I added 1 cup frozen cranberries and they turned out really nice. My BF ate 1/2 the pan before I could sneak some into the freezer! Easy to follow recipe, tasty, and adaptable. Oh, and MOIST! The batter seemed a little runny but the muffins were just perfect.

I live in PA and work in the billing dept. for a local health center. For fun I hang out with friends, and of course cook! I love to have fun cooking but am very inexperianced cook. Never get a chance due to my Dad working second shift and Mom makes his meal mid-day while I'm working. I love to read, play the piano and am learning guitar.
