I found this pancake recipe in an old cookbook but I modified it quite a bit. The original recipe called for heaping tablespoons of the wheat germ but I calculated what the exact measurement would be. Also, the original recipe uses white flour and I use whole wheat pastry flour. If you use a teflon griddle you do not have to use oil.

Directions

  1. Beat eggs lightly.
  2. Stir in oil and buttermilk.
  3. Add dry ingredients.
  4. Mix until blended.
  5. Cook on hot lightly oiled griddle, turning once, until cakes are browned on both sides.

These were SO good. I added some cinn & Splenda & used applesauce for the oil. They cooked up so nice & fluffy-very moist. Loved the healthy ingredients, too-thanks so much!

I didn't miss white flour at all in these pancakes.They're quite good and very filling.
