Wheat-Free Soft and Spicy Molasses Cookies

"Yummy! You won't even miss the wheat!:] This could be made gluten-free by subbing brown rice flour (or other gluten-free flour) for the spelt flour and the oats. You may add some finely chopped nuts, if you'd like."

  • Preheat oven to 350 degrees.
  • Cream the butter, sugar, and mollases in a mixer on medium speed.
  • Reduce speed to slow.
  • Slowly add in other wet ingredients, followed by the dry ingredients.
  • Grease a cookie sheet.
  • Drop the batter by tablespoons onto the cookie sheet.
  • Bake for 10-15 minutes in the 350 degree oven.
  • Allow to the cookies to cool before removing them from the sheet.

I am a teen cook, and not exactly the best one out there! I've burnt water on numerous occassions, so I don't make the hardest recipes.;) I'll be traveling to Quebec this coming year...I can't wait to try the cusine!
