Adapted from other banana bread recipes. I wanted something lightweight, fluffy and delectable. and wheat free. Texture is such an issue when going wheat free. This one does the trick for me.

  1. Preheat oven to 400°F.
  2. Combine first four ingredients in a large bowl and thoroughly beat, until eggs start to change color.
  3. Combine banana, oats, vanilla and milk, add to the bowl.
  4. Mix together all the rest of the dry ingredients, mix into the wet ones, beating well.
  5. Pour into Pyrex dish or pan
  6. Bake at 400°F for 1/2 hour or until knife come out clean.
  7. Cool.
