Hearty, flavorful and filling. My husband and I were both suprised at how delicious this was. The included ingredients really give a full, complete flavor to the dish. I compiled this after reading through several recipes and not being satisfied. This would be a great side dish, but we eat it as a one-dish meal.
3 -4 tablespoons
herbs
, of your choice
(can leave out)
Directions:
1
Starting with about 7 Cups of water, boil wheat for 1 hour, keeping the water level about an inch above the wheat. (You will need to add water periodically.).
2
Roast Almonds by baking on a cookie sheet or pan at 400* for 10 minutes, stirring/flipping after 5 minutes. Set aside to cool, then chop to desired size.
3
Peel and cut apples, finely grate orange zest, juice orange (chunks in the juice are okay.).
4
When wheat is done boiling (it should have a tender, rubbery consistency), drain and rinse with cold water. Drain well.
5
My feta was herb-soaked in a garlic, olive oil, lemon juice, rosemary, dill mix. It adds a lot to the salad.
6
Mix everything together. You can serve it right away, but it gets even better the next day.
