Comfort food that is easy cut down to serve two. We thought the flavors came together nicely and it was very easy to make. This recipe wade using fat free cheese which does not melt well but did melt fairly well on these also used whole wheat tortillas. Thanks for the post.

I just made these, using tomato-jalapeno tortillas and wrapped them like enchiladas. They were quite yummy. Thanks for the recipe.

Yummy! I made these as directed, but I wrapped them more like an enchilada - to fit into my pan, lol. I used some leftover chicken and a Mexican cheese blend. Easy and tasty. Thanks Debbie. Made for 123 Tag.

Yummmm!!!!!1 I cheated and used pre-cooked chicken but otherwise followed the directions exactly. I took them to work for a potluck and everyone loved them.

What a wonderful and simple recipe. I used canned refired beans and red enchilada sauce. I made them a bit too spicy, but the next day topped with poached eggs, sour cream and avocado and had a modified huevos rancheros. Delicious!
