Wendi's Famous Almond Toffee

"An amazing toffee recipe given to me by a friend of a friend who hosted an annual toffee making party. Under her tutelage I learned about stirring the butter and sugar constantly to avoid having them separate (especially at high altitude).   • 2 cups salted butter
  • 2 cups granulated sugar
  • 14 cup water
  • 3 cups whole almonds (may substitute other nuts)
  • 1 12 lbs milk chocolate chips or 1 1/2 lbs dark chocolate chips, to taste
  • 2 cups chopped walnuts (optional)

  • Heat butter, sugar and water in a heavy stock pan on med high heat.
  • Stir constantly to 250 F degrees (using candy thermometer).
  • At 250 F degrees add nuts and continue to stir to 300 F degrees.
  • Pour hot candy into an 11" x 15" jelly roll pan.
  • When toffee has cooled slightly (approx 10 min) place half the chocolate chips on top.
  • As the chocolate melts spread evenly
  • Sprinkle with walnuts if desired.
  • When cool, invert the toffee on waxed paper.
  • Carefully melt the remaining toffee approx 1-2 min in microwave or over double boiler.
  • Spread melted chocolate on toffee.
  • Again sprinkle with walnuts if desired.
  • When completely cooled and hardened break into small pieces.
  • Store in refrigerator.
