    From the New Settlement Cookbook. A classic. You can pour it over toast or dip bread into it like fondue. Nice over veggies or with apples too. If you like spice, you can kick up the amount of cayenne, but that's not very Welsh.

    Directions:

      Melt the butter in a double boiler or in the microwave.
    2. 2
      Break the cheese into small bits and add to the melted butter with the salt, pepper, mustard and cayenne.

      Heat until cheese melts, stirring regularly.

      Beat egg and milk together.
    5. 5
      Add the egg mix to the cheese mix, and while it is still heating, stir until thick.

      Serve right away.
