Made this for DH so I halved the ingredients. He loved this. I made as written, althpugh I used only a normal beer (Victoria Bitter) I had on hand. DH loved this I had enough for 3 slices of bread and with 1 of the slices I used some shaved ham first and then topped with the cheese mix all I can say is............devoured thsi! Such a quick and very easy recipe to make. This would be great for a quick and easy weekend dinner or lunch, and perfect on a cold winters day! Thanks mersaydees, a great keeper for the next quick, easy and very tasty meal!

  1. Toast the bread on both sides.
  2. Melt the butter in a heavy saucepan over a low heat.
  3. Add the cheese and ale, stirring constantly.
  4. Add mustard, and salt and pepper to taste.
  5. Spread on toast and grill or broil until browned and bubbling.
