I made this recipe to take to a family reunion so our diabetic and dieting members could also enjoy a guilt free dessert. I thought that it was a great treat for anyone, even those who did not have special dietary needs...delicious, fast and easy to make, and visually very appealing too! I used a chocolate crumb crust, sugar-free white chocolate pudding, and raspberries which I layered in the filling rather than mixing in because I was afraid that the delicate berries might crush and bleed. I borrowed a suggestion from Taste Tester's review, and garnished the top with grated chocolate.
We are having company for dinner later this week and I plan to make this dessert again....you know it is a hit when you make something twice in a week!

  1. Prepare pudding with the 1% milk according to package directions.
  2. Mix together the berries and pudding in a large mixing bowl.
  3. Fold in whipped topping.
  4. Divide evenly among crusts.
  5. Cover and refrigerate until chilled (2 hours).
