"I got this recipe from someone at my Weight Watchers meeting. I don't know where the original recipe came from. It's very low points and I can eat it every day without getting tired of it."

  • Mix chicken broth, frozen broccoli and tomatoes and chilies together.
  • Simmer for 25 minutes or until veggies are tender.
  • Cube Velveeta and put into soup pot.
  • Simmer just until cheese is melted.
  • This recipe freezes and refrigerates well. I make a large recipe at the beginning of the week and use it to snack on when I'm in danger of breaking my diet. I can have a large bowl and some crusty bread with it and still be under 5 points.

  1. I am on a sodium reduced diet, is there anyway that this can be made with less sodium? The nutrition says 991.2 mg for 1 serving (234 g).

  1. Much too thin for my liking. I added 4oz extra cheese, pureed the broccoli stalks, added 2 tsp of corn starch and about 3 T of potato flakes and it was more what we were looking for.
     
  2. OK this isnt haute cuisine, but I'm giving this 5 stars for what it is--good tasting , low calorie and reasonably healthy. And very easy to make. What's not to like about that? I read the reviews and added some red pepper flakes for some kick, and added about 2 teaspoons of corn starch to thicken it a bit....but I just added extra broccoli florets for bulk and didnt find it too thin at all. Thanks for the recipe.
     
  3. Interested in making this, but don't want to use precessed cheese. Can you recommend a real cheese to use instead?
     
  4. If you want a REALLY delicious broccoli soup, go to Looney Spoons. I call theirs Dream of Broccoli and serve it to guests all the time getting RAVES. It's low in WW points but it's actually good enough to make a complete lunch with just some good bread on the side.

  1. I made my own "Velveeta" from an online recipe using sharp Cheddar, unflavored gelatin and boiling water. Perfect, without Velveeta's chemical additives. I also added crushed tomatoes along with the Rotel Chili's for some added body and flavor.
     
  2. I’ve made this for years. I purée it and reduce cheese to 7 ounces . Full flavor and not watery using this method.I use California blend frozen vegs. Addicted to this!
     
  3. I make this soup a lot. To thicken just use an immersion blender and you get a great soup with more intense flavor.
     
  4. I made this last night using a bag of california blend mixed vegetables instead of broccoli (it's what I had on hand) and it is fantastic! I used about 3 1/2 cups of reduced sodium chicken broth and added a couple of tablespoons of cornstarch/water to thicken at the end. Very good - glad to find this posted her for future reference!
     
  5. More cheese, thickened with cornstarch slurry, added a little miso paste.
