Weight Watchers 1point Muffins

"I got this from my Mom. She got it at her WW meeting. You can use any cake mix. Suggestions are chocolate, spice, or carrot mixes. I haven't tried it yet but I'm putting here on Zaar for safe keeping."

  1. I just calculated these and they came out be 8 points per serving.wow..

  2. I used one spice cake mix, one 15 oz can of pumpkin and one cup of water. I mixed it with the mixer until smooth and it made 24 muffins, which comes out to 2 p per muffin. These are the best thing I have ever made!

  3. I used a reduced sugar chocolate cake mix for this recipe and it turned out well. 12 nice big muffin/cupcakes and they were 3 points each based on the stats of my cake mix.

  4. These are just fine for a treat when you counting points. I used a Betty Crocker Devil's Food Cake mix, 15 oz pumping purée and 1/2 cup of water as the recipe was written. The points calculation in the screen shot below is the total of the ingredients (full box of cake mix + can of pumpkin). When you divide it into 12 individual muffins they come to less than 1 point each. If you ate ALL of the muffins you'd consume 10 points.

I am a teacher who is near the end of my career. I have many craft interests and have just added cooking to my list. Since I like to keep a check on what DH eats I usually try to follow the WW diet and just love their cookbooks. Recipezaar has become the answer to my many cookbooks and recipes I gather and just can't seem to get organized. MMMMM maybe in retirement. <img src="http://i42.photobucket.com/albums/e347/Saturn6666/KiwiDutch/3chefstag1.jpg">
