Weight Watchers 0 Point Garden Vegetable Soup

"This soup has been around for years! I taught Weight Watchers for 20 years and have been wildly endorsing this soup that long too! For WW Point followers, be aware that if you add starchy vegetables, you no longer have a 0 Point recipe. As well, if you use homemade stock, you may no longer have a 0 Point recipe. This recipe has a lot of "wiggle" room. I use home made chicken or turkey broth (very low sodium that way). Sometimes I'll use fresh spinach. In a pinch, I'll use canned green beans. I also like to play with the seasonings. I'll use fresh herbs from the garden when in season or I might try using hot sauce or pepper flakes to give it some heat. Also, try adding leftover chicken or shrimp but be sure to figure the points if you're following WW Points. This is a truly delicious, versatile and healthy dish!"

  • Spray a large sauce pan with non stick cooking spray.
  • Saute garlic, onions and carrots for 5 minutes.
  • Add broth, tomato paste, green beans, basil, oregano, salt and pepper.
  • Simmer for a about 5-10 minutes until all vegetables are tender.
  • Add the zucchini and simmer for 5 minutes longer.
  • Add frozen spinach and continue heating until the soup is steaming hot.

  1. Our leader said that if you are tired of vegetable soup, to puree it and with one laughing cow cheese it becomes a cream of vegetable soup. A good change up for this recipe.
     
  2. Love this soup, making a big batch tommrow, freezes well to. Great to eat after a long walk with my dog on a cool autumn day.
     
  3. So delicious. I added a a wedge of light laughing cow cheese to my soup when I reheated it. I know that adds a 1/2 point but what a great taste to an already great tasting soup.
     
  4. I love this soup because it's so versatile. I made it last night with zucchini and Mexican gray squash, diced canned tomatoes, and added shredded cabbage. I didn't have any carrots or spinach, but with the extra squash and cabbage it was great anyway.
     
  5. I have been making this soup since I first joined Weight Watchers 10 years ago. It is delicious even for those who aren't watching their calorie intake. Also a great way to get more veggies in your diet!

The picture above is of my daughter and me, taken about 35 years after the photo she posted on her Zaar page (WeBees); I’m the one in the goofy hat in her picture and she’s the one on the left in my picture. Most of my pre-married life was spent in Northern California in the San Francisco Bay Area with all the wonderful produce, sea food and wines that the region offers. Five of my teenage years were spent in West Africa with my family (medical missionaries). On our way back to the US we traveled extensively throughout Europe and after marrying my Navy husband, we were moved to Asia. All this said because these travel experiences greatly influenced my interest in cooking and willingness to try new foods. I’ve been with Zaar for about two years and have enjoyed trying new recipes and learning about the person who posted it. There are some crazy, wonderful and talented people out there, not to mention knowledgeable and gracious. My oldest cookbook was given to me by my grandmother – “The Boston-School Cook Book” by Fannie Merritt Farmer circa 1896. I’m an Interior Designer but also taught Weight Watchers for about twenty years. It’s tough loving to cook and bake and still keep at a healthy weight!
